Instructions

  1. Grate the zucchini: Wash the zucchinis thoroughly and grate them using a grater, collecting the grated zucchini in a large mixing bowl.
  2. Draw out moisture: Sprinkle 1 teaspoon of salt over the grated zucchini and let it sit for about 10 minutes to help release excess moisture.
  3. Squeeze out liquid: Use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible from the salted zucchini, then return the dry zucchini back to the mixing bowl.
  4. Mix the batter: Add 1/2 cup flour, 1/4 cup grated Parmesan cheese, 2 large eggs, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, and optional 1/4 cup chopped fresh parsley to the zucchini. Mix everything thoroughly until well combined.
  5. Heat the oil: Heat a frying pan over medium heat and add enough vegetable oil to cover the bottom of the pan for shallow frying.
