Instructions

- Draw out moisture: Sprinkle 1 teaspoon of salt over the grated zucchini and let it sit for about 10 minutes to help release excess moisture.
- Squeeze out liquid: Use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible from the salted zucchini, then return the dry zucchini back to the mixing bowl.
- Mix the batter: Add 1/2 cup flour, 1/4 cup grated Parmesan cheese, 2 large eggs, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, and optional 1/4 cup chopped fresh parsley to the zucchini. Mix everything thoroughly until well combined.
- Heat the oil: Heat a frying pan over medium heat and add enough vegetable oil to cover the bottom of the pan for shallow frying.
- Form and cook fritters: Once the oil is hot, spoon about 2 tablespoons of the zucchini mixture into the pan for each fritter, flattening each slightly with a spatula to form discs.
