Ingredients
Scale
Base
- 2 thick slices of bread such as brioche, wheat or sourdough
Custard Mixture
- 1/4 cup Greek yogurt
- 1 large egg
- 2 tablespoons maple syrup, agave, honey, or melted chocolate, plus more for drizzling
- Pinch of cinnamon
Toppings
- Blueberries, strawberries, and/or raspberries, for topping
- Powdered sugar (optional)
- Toasted oats (optional)
- Dried coconut (optional)
- Chocolate shavings (optional)
Instructions
- Preheat Oven or Air Fryer: Preheat your oven to 400ºF or your air fryer to 375ºF to prepare for baking the yogurt toast.
- Prepare Custard Mixture: In a medium bowl, whisk together Greek yogurt, the egg, maple syrup (or chosen sweetener), and a pinch of cinnamon until fully combined and smooth.
- Create Indentations in Bread: Using your fingers or the back of a spoon, gently press into the center of each bread slice to create a well or indentation without tearing the bread. This will hold the custard mixture.
- Fill Bread with Custard and Add Berries: Divide the custard mixture evenly between the two bread slices, filling each indentation. Top the custard-filled bread with your choice of fresh berries like blueberries, strawberries, or raspberries.
- Bake or Air Fry the Toast: For oven: Place the prepared bread slices on a baking sheet and bake at 400ºF for 10 to 13 minutes until custard is set and bread is golden brown. For air fryer: Carefully place the bread slices in the air fryer basket and cook at 375ºF for 7 to 10 minutes until set and golden.
- Serve: Transfer the baked yogurt toast to a plate. Drizzle with additional maple syrup, honey, or melted chocolate. Optionally, sprinkle with powdered sugar, toasted oats, dried coconut, or chocolate shavings for extra texture and sweetness.
Notes
- You can use any thick bread such as brioche, wheat, or sourdough for best results.
- Adjust the sweetener to your preference, swapping maple syrup for honey, agave, or melted chocolate as desired.
- Ensure you create a deep enough well in the bread to hold the custard without spilling during baking.
- Fresh berries can be mixed or used individually depending on your favorite fruits.
- Using an air fryer reduces cooking time and provides a crispier texture.
- Optional toppings like toasted oats or dried coconut add a delightful crunch.
