Description
White Christmas Rocky Road is a delightful, no-bake dessert featuring creamy white chocolate melded with marshmallows, pistachios, glacé cherries, and desiccated coconut. This festive treat is easy to prepare and perfect for holiday gifting or indulging in a sweet, crunchy, and chewy bite.

Chocolate Mixture
- 500g (1 lb) white chocolate melts/discs, chips, or chopped block
- 2 tbsp grapeseed oil or other neutral flavored oil
Add-ins
- 2 1/2 cups (tightly packed) regular size marshmallows, most cut in half
- 1 cup pistachios, unsalted and toasted
- 1 cup glacé cherries
- 1/2 cup unsweetened desiccated coconut (or finely shredded, not flakes)
Instructions
- Prepare the Pan: Lightly grease a 20cm (8″) square pan with butter. Line it with baking paper, allowing an overhang on the sides to make removal of the rocky road easier later.
- Reserve Toppings: Set aside about 8 of the nicest glacé cherries for topping. Finely chop 1 tablespoon of the pistachios to sprinkle over the top as well.
- Melt the Chocolate: Place the white chocolate and grapeseed oil in a heatproof bowl. Microwave in 30-second increments, stirring well between each, until the mixture is fully melted and smooth.
- Mix in Add-ins: Stir the marshmallows, pistachios (except the reserved tablespoons), glacé cherries (except the reserved pieces), and desiccated coconut into the melted chocolate until everything is evenly coated.
- Pour and Spread: Pour the mixture into the prepared pan, spreading it evenly. Firmly bang and shake the pan to settle the mixture and eliminate air pockets.
- Add Toppings: Arrange the reserved glacé cherries on top and sprinkle with the chopped pistachios.
- Chill and Set: Refrigerate the rocky road for at least 3 hours, or until firm. Once set, lift it out of the pan using the paper overhang and cut into squares or chunks suitable for eating or gift giving.

- Note 1: White chocolate melts, discs, chips, or chopped block all work fine; choose whatever is easiest to melt.
- Note 2: Grapeseed oil adds a smooth texture and sheen but can be substituted with another neutral oil like vegetable or light olive oil.
- Note 3: Toasted pistachios provide extra flavor and crunch. Toast them lightly in a dry pan until fragrant.
- For easier cutting, warm the knife slightly before slicing.
