Cream Cheese Swirl

  • ¼ cup Sugar
  • 1 Egg
  • 1 teaspoon Vanilla extract

Instructions

  1. Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt until evenly combined. Set aside for later.
  2. Mix Wet Ingredients: In a separate large bowl, combine the melted butter and sugar, mixing well to incorporate. Then add the eggs one at a time, beating thoroughly after each addition. Stir in the ube extract and ube jam until the mixture is smooth and uniform in color.
  3. Combine Wet and Dry: Gradually add the dry ingredient mixture into the wet ingredients, folding gently until just combined. Be careful not to overmix to maintain a tender texture.
  4. Separate Batter for Swirl: Reserve approximately ½ cup of the batter and set aside. Pour the remaining batter evenly into a greased 9 x 13 inch baking pan, spreading it out smoothly for an even layer.
  5. Prepare Cream Cheese Swirl: In a medium bowl, beat together the softened cream cheese, sugar, egg, and vanilla extract until smooth and creamy.
  6. Assemble Swirl Layer: Evenly spread the cream cheese mixture over the batter in the pan. Then drop the reserved ½ cup of ube batter sporadically over the cream cheese layer in small dollops. Using a chopstick or skewer, gently swirl the two mixtures together to create a marbled effect.
