  • 25 grams Ube Powder
  • 3 teaspoons Baking Powder
  • 1 teaspoon Salt

Wet Ingredients

  • 230 grams Cold Butter (2 sticks), cubed
  • 160 grams Brown Sugar
  • 160 grams White Sugar
  • 1 teaspoon Ube Extract
  • 2 Eggs
  • 1 Egg Yolk

Instructions

  1. Mix Dry Ingredients: In a bowl, combine all-purpose flour, ube powder, baking powder, and salt. Mix thoroughly and set aside.
  2. Prepare Egg Mixture: In a small bowl, whisk together the 2 eggs and 1 teaspoon of ube extract until well combined. Set aside.
  3. Break Butter: Using a hand mixer or stand mixer with a paddle attachment, beat the cold, cubed butter for 30-35 seconds just until it breaks apart. Avoid creaming it.
  4. Add Sugars: Add the brown and white sugars to the broken butter, and pulse the mixer until the mixture resembles pebbles, about 40-45 seconds.
  5. Add White Chocolate Chips: Incorporate the white chocolate chips into the butter and sugar mixture, mixing just until combined.
  6. Add Dry Ingredients: Gradually add the dry flour mixture into the butter mixture. Mix gently, just until the dough looks sandy without overmixing.
  7. Combine Egg Mixture: Add the egg and ube extract mixture along with the egg yolk to the dough. Mix at low speed (1 or 2) just until combined. Do not overmix.
  8. Portion Dough: Form large balls of dough, approximately 165 grams each. Assemble roughly rather than rolling them to keep the craggy edges typical of Levain cookies.
  9. Freeze Dough: Place the dough balls closely on a tray and freeze for at least 2 hours or overnight to set.
  10. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 365°F (185°C) and line a baking sheet with parchment paper.
  11. Arrange Dough for Baking: Place 6 dough balls spaced at least 2 inches apart on the baking sheet.
  12. Bake Cookies: Bake in the middle rack of the oven for 15-17 minutes until edges are set but centers remain soft.
  13. Cool Cookies: Let the cookies cool on the baking sheet for 10 minutes, then transfer them to a wire rack to cool completely.
