Description

A flavorful and healthy Turkey Egg Roll in a Bowl recipe that combines ground turkey with a savory blend of ginger, garlic, soy sauce, and crunchy coleslaw mix for a quick and easy dish reminiscent of classic egg rolls without the wrapper.

Ingredients

Scale

Protein

  • 1 pound Ground Turkey

Vegetables

  • 3 Green Onions, thinly sliced with green & white separated
  • 14 ounces Coleslaw Mix

Flavorings & Oils

  • 2 Tablespoons Oil (divided)
  • 2 teaspoons Fresh Ginger, grated
  • 2 cloves Garlic, minced
  • ¼ Cup Soy Sauce
  • 2 teaspoons Sesame Oil
  • ¼ teaspoon Red Pepper Flakes

Garnish

  • Sesame seeds for garnish

Instructions

  1. Cook Turkey: Heat 1 tablespoon of oil in a skillet over medium heat. Add the ground turkey, breaking it up with a spatula, and cook until browned and no longer pink inside, about 6-8 minutes. Transfer the cooked turkey to a dish and tent with aluminum foil to keep warm.
  2. Sauté Aromatics: Add the remaining tablespoon of oil to the same skillet. Add the white parts of the green onions, grated ginger, and minced garlic. Stir and cook for 1 minute until fragrant but not browned.
  3. Cook Vegetables: Stir in the coleslaw mix, soy sauce, sesame oil, and red pepper flakes. Cook while stirring occasionally until the cabbage softens and wilts to your preferred tenderness, about 4-5 minutes.
  4. Combine Turkey and Veggies: Return the cooked turkey to the skillet with the vegetables. Stir to combine and cook for an additional 1-2 minutes until everything is heated through.
  5. Serve: Divide the mixture into serving bowls. Garnish with the reserved green parts of the green onions and sprinkle with sesame seeds before serving.

Notes

  • You can substitute ground chicken or pork for the turkey if preferred.
  • Adjust the red pepper flakes to your preferred spice level or omit for a milder flavor.
  • Use low-sodium soy sauce to reduce salt content if desired.
  • For a gluten-free version, use tamari in place of soy sauce.
  • This dish pairs well with steamed rice or cauliflower rice for a low-carb option.
