Description

Tropical Yogurt Custard Toast is a delightful and refreshing breakfast or snack featuring thick slices of bread filled with a creamy yogurt and egg custard, topped with vibrant tropical fruits and a sprinkle of shredded coconut. Baked or air fried to golden perfection, this dish offers a harmonious blend of creamy, sweet, and tangy flavors with a satisfying texture contrast.

Ingredients

Scale

For the Toast and Custard

  • 2 slices thick bread (brioche, sourdough, or gluten-free, about 1 inch thick)
  • ½ cup plain Greek yogurt (or coconut/plant-based yogurt)
  • 1 large egg (or flax egg for vegan)
  • 12 tsp honey or maple syrup (optional)
  • ½ tsp vanilla extract (optional)
  • Zest of ½ lime or lemon (optional)
  • Pinch of cinnamon or nutmeg (optional)

For the Topping

  • ½ cup assorted tropical fruits (mango, pineapple, kiwi, passionfruit, banana, papaya), sliced or diced
  • 1 tbsp shredded coconut (optional)
  • Honey, maple syrup, or lime juice for drizzling (optional)

Instructions

  1. Preheat oven or air fryer: Preheat your oven to 350°F (175°C) or an air fryer to 350°F (180°C) to ensure the cooking environment is ready for a crisp and even bake.
  2. Prepare the bread: Gently press the center of each bread slice to create a shallow well without tearing the bread, creating a perfect cavity to hold the custard filling.
  3. Make the custard: In a mixing bowl, vigorously whisk together the plain yogurt, egg, optional honey or maple syrup, vanilla extract, citrus zest, and a pinch of cinnamon or nutmeg until the mixture is smooth and well combined.
  4. Assemble: Carefully spoon the custard mixture evenly into the wells of the prepared bread slices. Top each slice with the assorted tropical fruits, then sprinkle with shredded coconut if using.
  5. Bake or air fry: Place the assembled bread on a lined baking sheet for the oven or directly into the air fryer basket. Bake for 10–15 minutes or air fry for 5–8 minutes, until the custard is set and the edges of the bread turn golden.
  6. Finish & serve: Once cooked, drizzle the custard toasts with honey, maple syrup, or lime juice according to your taste. Add any extra fruit or coconut if desired. Serve warm for the best experience.

Notes

  • You can substitute the large egg with a flax egg (1 tbsp ground flaxseed mixed with 3 tbsp water) to make this recipe vegan.
  • Using thick bread like brioche or sourdough helps hold the custard well without becoming soggy.
  • Feel free to use any tropical fruits you prefer or have on hand; fresh is best for brightness.
  • If you don’t have an air fryer, the oven method works perfectly with a slightly longer bake time.
  • Adjust sweetness by adding more or less honey or syrup to the custard and drizzling.
  • For gluten-free, use gluten-free bread slices of similar thickness.
