Bread
- 4 slices of good quality crusty bread like sourdough or ciabatta, sliced 1cm (0.5″) thick, preferably slightly stale
- 1 garlic clove, halved (unpeeled)
Celery and Lime Topping
- 6 large sticks of celery
- 1 garlic clove, peeled
- 4 tbsp extra virgin olive oil
- 1 tbsp lime juice
- 1/4 tsp salt, plus more to taste
- Black pepper, to taste
Instructions
- Prepare the bread: Preheat a griddle pan or barbecue (using the grill side, not the hotplate) on high heat to get it hot enough for toasting.
- Toast the bread: Place the slices of bread onto the hot barbecue or griddle pan and cook each side until golden brown with visible char lines. Alternatively, you can toast the bread in a toaster or under a grill/broiler until crisp.
- Rub with garlic: Remove the toasted bread from heat and rub the surface lightly with the halved, unpeeled garlic clove to impart subtle garlic flavor.
- Make celery and lime topping: Cut 5 1/2 of the celery sticks into chunks (about 4 cups) and place into a food processor along with the peeled garlic clove, 4 tablespoons of extra virgin olive oil, 1 tablespoon lime juice, 1/4 teaspoon salt, and black pepper to taste. Process until smooth.
- Add diced celery: Dice the remaining half celery stick finely and stir it into the celery puree to add texture and freshness.
- Assemble the bruschetta: Spread the celery and lime topping evenly over the toasted bread slices. Drizzle a little extra virgin olive oil on top for a glossy finish and serve immediately to enjoy the crisp textures and bright flavors.
Notes
- For best flavor, use slightly stale bread as it toasts better and holds the topping well without becoming soggy.
- If you do not have a food processor, you can finely chop the celery and garlic and mix thoroughly with olive oil, lime juice, salt, and pepper.
- Adjust the lime juice and salt according to your taste preference for balance.
- This bruschetta is best served fresh to retain the crispiness of the bread and the freshness of the celery topping.
