Scale
Sweet Potato Mixture
- 1 medium-large sweet potato, baked
- 1/4 tsp cinnamon (ground)
- 2 Tbsp butter
- 1/4 tsp salt
Toppings
- 1 apple, small (Gala or Jazz), diced
- 1/4 cup pecans
- 1 tsp brown sugar
Instructions
- Prepare Sweet Potato: Cook the sweet potato using your preferred method such as baking in the oven at 400°F for 45-60 minutes, microwaving until soft, or using an Instant Pot until tender.
- Scoop Sweet Potato: Once the sweet potato is cooked and cool enough to handle, cut it open and scoop the flesh into a mixing bowl.
- Mash Mixture: Add the ground cinnamon, butter, and salt to the sweet potato flesh. Mash thoroughly until smooth and all ingredients are well incorporated.
- Add Brown Sugar: Sprinkle the brown sugar evenly on top of the mashed sweet potato for a subtle sweetness.
- Add Apples: Dice the small apple into bite-sized chunks and scatter them over the sweet potato mixture.
- Top with Pecans: Add the pecans on top for crunch and enjoy the bowl warm or at room temperature.
Notes
- You can bake the sweet potato in advance to save time in the morning.
- For a dairy-free option, substitute butter with coconut oil or a plant-based spread.
- Use any sweet apple variety you prefer; Gala and Jazz add a nice balance of sweetness and tartness.
- Optional: Add a drizzle of maple syrup or a sprinkle of nutmeg for extra flavor.
- This breakfast bowl pairs well with a cup of coffee or herbal tea.
