Instructions

  1. Cook onion: In a large skillet over medium heat, add 2 tablespoons of olive oil and the finely diced sweet onions. Cook for 2-3 minutes until the onions become translucent and fragrant.
  2. Add garlic: Add the minced garlic to the skillet and sauté for 1 minute, being careful not to let it burn, so it releases its aroma.
  3. Combine squash and season: Stir in the cubed summer squash, zucchini, salt, pepper, and butter. Cover the skillet with a lid and cook for 5 minutes to start softening the vegetables.
  4. Cook until tender: Remove the lid and stir the vegetables. Continue cooking for 5-7 minutes or until the squash are cooked to your preference. For a lightly browned and caramelized texture, let the squash sit without stirring for 1-2 minutes before stirring again.
