Instructions

  3. Mix the glaze: In a large bowl, combine the olive oil, honey, fresh thyme leaves, salt, and several turns of freshly ground black pepper to create a flavorful coating.
  4. Coat the carrots: Toss the carrot pieces in the honey-thyme mixture until they are fully coated, then spread them out on a rimmed baking sheet in a single layer.
  5. Roast: Place the baking sheet in the oven and roast the carrots for about 60 minutes, stirring or flipping them 2-3 times during cooking to ensure even caramelization. Adjust time based on carrot thickness.
