- 2 large chicken breasts, sliced in half lengthways
- 150g broccoli florets

- 50g grated mozzarella cheese
- 10g chopped parsley (optional)
Instructions
- Preheat and prepare chicken: Preheat your oven to 190C (375F). Slice each chicken breast in half lengthways to create four thinner pieces. Add 1 tablespoon of vegetable oil to the base of an oven-proof casserole dish or pan, then place the chicken pieces in a single layer.
- Add broccoli: Arrange the broccoli florets evenly around the chicken pieces in the dish.
- Season: Sprinkle paprika and mixed herbs over the chicken and broccoli. Add a small pinch of salt and a generous grind of black pepper to enhance the flavor.
- Add cream of chicken soup: Pour the 400g of canned cream of chicken soup over the chicken and broccoli mixture. Optionally, add 50ml of chicken stock to loosen the sauce for a more saucy texture.
- Top with cheese and bake: Evenly sprinkle the grated mozzarella cheese over the entire dish. Cover with kitchen foil and bake in the preheated oven for 20 minutes.
- Finish baking uncovered: Remove the foil and continue baking for an additional 15 minutes, allowing the cheese to melt and brown slightly.
- Serve: Remove from the oven and optionally sprinkle chopped parsley over the top for a fresh, vibrant finish. Serve hot and enjoy your cheesy baked chicken with broccoli.

- You can add 50ml chicken stock to the cream of chicken soup to create a looser sauce.
