- 75 g Finely chopped pistachios, for coating (2.6 oz)
Instructions
- Prepare : Begin by breaking the cookies into small pieces. Roughly chop the peeled, unsalted pistachios. Combine the cookies and chopped pistachios in a bowl and set aside.
- Melt chocolate : Finely chop the white chocolate and place it in a double boiler with the coconut oil. Gently melt the mixture, stirring occasionally. Once melting starts, remove from heat to avoid burning. If your pistachio butter is unsweetened, add the powdered sugar now and then stir in the pistachio butter until you achieve a smooth consistency.
- Combine : Pour the melted white chocolate and pistachio butter mixture over the prepared cookie and pistachio pieces. Mix thoroughly to ensure all pieces are coated evenly.
- Shape the salami : Lay two sheets of plastic wrap on top of one another. Pour the mixture onto the wrap and shape it into a rough log. For a neater shape, roll the log inside a sushi mat. Secure it with a rubber band and wrap again tightly with plastic wrap.
- Freeze : Place the wrapped salami log in the freezer for at least 2 hours, allowing it to set firmly.
- Add final touch : While the salami is chilling, finely chop the remaining pistachios. Once set, carefully unwrap the frozen salami and roll it in the finely chopped pistachios until it is fully coated.
- Serve : Let the salami thaw at room temperature for about 15 minutes before slicing. This softens it slightly, making it easier to cut while maintaining its texture.
