Description

These delightful No-Bake Monster Cookies combine creamy peanut butter, oats, and a generous helping of chocolate chips and M&M’s for a fun and easy treat that requires no oven. Perfectly sweet and chewy, they come together quickly and set in the fridge for a convenient grab-and-go snack.

Ingredients

Scale

Base Ingredients

  • 6 tablespoons butter, softened
  • 6 tablespoons sugar
  • ¼ cup brown sugar
  • ¾ cup creamy peanut butter
  • 6 tablespoons quick cooking oats, pulsed in a food processor
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1½ cups quick cooking oats, not pulsed
  • 10 tablespoons miniature M&M’s, divided (8 tablespoons and 2 tablespoons)

Chocolate Topping

  • 1 cup semi-sweet chocolate chips
  • 3 tablespoons heavy cream

Instructions

  1. Prepare Baking Dish: Line an 8-inch baking dish with foil or parchment paper to prevent sticking and make removal easier. Set it aside while you prepare the cookie mixture.
  2. Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, sugar, and brown sugar together until light and fluffy. This creates a creamy base for your cookies.
  3. Add Peanut Butter and Flavors: Mix in the creamy peanut butter thoroughly until well combined. Then, add the 6 tablespoons of quick cooking oats that have been pulsed in a food processor to a finer texture, along with the vanilla extract and salt. Stir to distribute evenly.
  4. Fold in Remaining Oats and M&M’s: Gradually add the 1½ cups of unprocessed quick cooking oats and carefully fold them in to maintain texture. Stir in 8 tablespoons of miniature M&M’s to embed some colorful sweetness into the dough.
  5. Press Mixture into Pan: Transfer the cookie dough into the prepared baking dish and press it down evenly with the back of a spoon or your fingers, creating a compact and uniform layer.
  6. Melt Chocolate Topping: In a small microwave-safe bowl, combine the semi-sweet chocolate chips and heavy cream. Heat in 30-second intervals, stirring each time until the chocolate is fully melted and smooth.
  7. Spread Chocolate and Add Toppings: Pour the melted chocolate over the pressed cookie base and smooth it out evenly. Sprinkle the remaining 2 tablespoons of miniature M&M’s on top for added texture and decoration.
  8. Chill and Set: Cover the baking dish with plastic wrap or foil and refrigerate for at least 2 hours, allowing the cookies to firm up and the chocolate to set completely.
  9. Serve: Once set, remove from the fridge, lift the cookie block out using the foil or parchment paper edges, and cut into squares. Enjoy your no-bake monster cookies!

Notes

  • For best results, use quick cooking oats for the right texture and quick setting.
  • If you prefer a nut-free option, substitute the peanut butter with sunflower seed butter, but note the flavor will change.
  • Store cookies covered in the refrigerator for up to one week to maintain freshness.
  • You can customize by adding other mix-ins like chopped nuts or different candy pieces.
  • Be sure to pulse only 6 tablespoons of oats in the food processor to avoid making the texture too fine.
