  • 3/4 cup (100g) unsalted almonds

  • 1 cup (250g) Greek yogurt (plain or any flavor)
  • Assorted sliced fresh fruit (such as berries, kiwi, peaches, or mango)
  • Optional glaze: 2 Tablespoons apricot preserves mixed with 1 Tablespoon water

Instructions

  1. Prepare the pan: Spray the bottom of a 9-inch tart pan, cake pan, or pie dish with nonstick spray, then line it with a parchment paper circle to prevent the crust from sticking and to make removal easier.
  2. Soak and prepare dates: Soak the pitted Medjool dates in warm water for 10 minutes to soften, then drain and cut each date in half.
  3. Make the crust: In a food processor or blender, pulse the soaked dates, unsalted cashews, and almonds until a thick, sticky dough forms with broken-up nuts. Press this mixture evenly into the prepared tart pan, moving partly up the sides to form the crust.

  5. Apply the glaze (optional): Combine the apricot preserves and water, then brush this mixture lightly over the fruit to give a glossy finish.
