Ingredients
Scale
Wet Ingredients
- 1 tbsp Unsalted butter
- 1 tbsp Unsweetened almond milk (at room temperature)
- 1/4 tsp Vanilla extract
Dry Ingredients
- 1 1/2 tbsp Dutch processed cocoa powder
- 1 1/2 tbsp Wholesome Yum Blanched Almond Flour
- 1 1/2 tbsp Besti Monk Fruit Allulose Blend
- 1 pinch Sea salt
Add-ins
- 2 tbsp ChocZero Sugar-free Dark Chocolate Chips (divided)
Instructions
- Melt the Butter: In a 6-ounce ramekin, heat the unsalted butter in the microwave for about 30 seconds until melted.
- Add Almond Milk and Vanilla: Stir in the unsweetened almond milk and vanilla extract until well combined.
- Mix Dry Ingredients: Add the Dutch processed cocoa powder, blanched almond flour, Besti Monk Fruit Allulose Blend, and a pinch of sea salt to the wet mixture. Stir thoroughly to create a smooth batter.
- Add Chocolate Chips: Stir in half of the sugar-free dark chocolate chips evenly into the batter, then smooth the top with a spatula or spoon.
- Microwave the Brownie: Microwave the ramekin for 40 to 50 seconds. The top should look slightly oily but not wet underneath. Insert a toothpick to check—it should come out with a small amount of batter that can form a ball between your fingers.
- Finish with Toppings: While the brownie is still hot, sprinkle the remaining chocolate chips on top. They will melt slightly, adding extra gooeyness and flavor to your mug brownie.
Notes
- Cooking times may vary depending on your microwave’s wattage; adjust accordingly to avoid overcooking.
- Use a microwave-safe ramekin or mug sized around 6 ounces for best results.
- Let the brownie cool slightly before eating to allow it to set and avoid burning your mouth.
- You can substitute almond milk with any other plant-based milk if preferred.
- For a nut-free version, consider using coconut flour instead of almond flour and adjust the liquid accordingly.
