Description

A vibrant and refreshing Mango Salad with Sweet Chilli Lime Dressing, featuring ripe mangoes, creamy avocado, crisp cucumber, and a zesty, slightly spicy dressing topped with crunchy peanuts. Perfect as a light lunch or a colorful side dish.

Ingredients

Scale

Dressing

  • 3 tbsp sweet chilli sauce
  • Juice of 2 limes
  • 1 tbsp olive oil
  • 1 tsp honey or maple syrup
  • ½ tsp freshly grated ginger
  • Sea salt flakes, to taste
  • Freshly cracked black pepper, to taste

Salad

  • 2 ripe mangoes, peeled and diced
  • 1 avocado, peeled, pitted and diced
  • ½ small red onion, finely sliced
  • 1 small cucumber, halved lengthways, then sliced (unpeeled)
  • 1 cup (30 g) coriander (cilantro) leaves, roughly chopped
  • ¼ cup (40 g) crushed peanuts

Instructions

  1. Make the dressing: In a small bowl, whisk together the sweet chilli sauce, lime juice, olive oil, honey, and freshly grated ginger until well combined. Season with sea salt flakes and freshly cracked black pepper to taste.
  2. Assemble the salad: In a shallow serving bowl, carefully layer the diced mango, sliced cucumber, diced avocado, finely sliced red onion, and roughly chopped coriander leaves in that order.
  3. Dress the salad: Drizzle the sweet chilli lime dressing evenly over the layered salad. Sprinkle the crushed peanuts on top for added texture and crunch. Toss gently just before serving to maintain the visual appeal of the layers while ensuring everything is well coated.

Notes

  • Use ripe but firm mangoes for the best texture and flavor.
  • If you prefer a spicier dressing, add a pinch of red chili flakes.
  • The salad is best served fresh to enjoy the contrasting textures.
  • Can be served as a side dish or a light vegetarian lunch.
  • For a nut-free version, omit the crushed peanuts or substitute with toasted seeds.
