Ingredients
Scale
Base Layer
- 1 (8 ounce) package cream cheese
- 1 cup sour cream
- 2 (16 ounce) cans refried beans
- 1 package McCormick® Taco Seasoning Mix
Cheese
- 4 cups shredded Mexican cheese blend (divided)
Toppings
- Chopped cilantro, for garnish
- Cherry tomatoes, for garnish
- Sliced avocados, for garnish
Instructions
- Preheat and soften cream cheese: Preheat oven to 350°F (175°C). In a large microwave-safe bowl, microwave the cream cheese and sour cream on high for 1 minute or until the cream cheese is softened. Remove from microwave and whisk with a wire whisk until the mixture is smooth and creamy.
- Mix in beans and seasoning: Add the refried beans, McCormick® Taco Seasoning Mix, and 2 cups of the shredded Mexican cheese blend to the cream cheese mixture. Stir everything together thoroughly until well combined.
- Assemble dip in baking dish: Spray a 13×9-inch baking dish lightly with non-stick cooking spray. Spread the bean mixture evenly into the prepared dish. Then sprinkle the remaining 2 cups of shredded cheese evenly over the top.
- Bake the dip: Place the dish in the preheated oven and bake for 25 minutes, or until the cheese on top is completely melted and bubbly.
- Garnish and serve: Remove the dip from the oven and let it cool slightly. Garnish with chopped cilantro, cherry tomatoes, and sliced avocados. Serve warm with tortilla chips for dipping.
Notes
- For extra heat, add diced jalapeños or a dash of hot sauce to the bean mixture.
- Substitute refried beans with black beans for a different flavor profile.
- This dip can be prepared a few hours in advance and baked just before serving.
- Leftovers can be refrigerated in an airtight container for up to 3 days and reheated in the oven.
