  • 1/3 cup almond flour
  • 1/3 cup coconut flour
  • 1/3 cup ground golden flaxseed (or additional almond flour)
  • 1 tbsp Joy Filled Eats Sweetener (or keto-friendly sweetener alternative)
  • 1 tsp vanilla extract

Cream Cheese Filling:

  • 8 oz cream cheese (softened)
  • 1 tsp vanilla extract
  • 1 egg
  • 1/4 cup Joy Filled Eats Sweetener (or keto-friendly sweetener alternative)
  • 3/4 cup fresh or frozen blueberries (do not thaw if using frozen)

Optional Glaze:

  • 1 tbsp softened butter
  • 1 tbsp finely ground sweetener
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to prepare it for baking the Danish.
  2. Melt the cheese: Place shredded mozzarella and 2 oz cream cheese in a microwave-safe bowl. Microwave for 1 minute, stir, then microwave for 30 seconds. Stir again and microwave for an additional 30 seconds until the cheese is fully melted and smooth, resembling fondue.
  3. Prepare the dough: Transfer the melted cheese along with almond flour, coconut flour, ground flaxseed, 1 tbsp sweetener, 1 tsp vanilla, and 1 egg into a food processor fitted with the dough blade. Process until the mixture is a uniform color and consistency. If you don’t have a food processor, mix thoroughly in a medium bowl with a wooden spoon and knead by hand on wax paper until well combined. Wet your hands and press the dough into a roughly 9×12-inch rectangle on a parchment-lined baking sheet.
  4. Make the cream cheese filling: In the same food processor bowl (no need to wash), combine softened cream cheese, 1 tsp vanilla, 1 egg, and 1/4 cup sweetener. Blend or beat with an electric mixer until smooth and creamy.
  5. Assemble the Danish: Spread the cream cheese filling down the center of the dough rectangle. If the filling spreads, gently push it back to the center using a rubber spatula. Sprinkle fresh or frozen blueberries evenly over the filling. Using a sharp knife, cut 1-inch-wide strips along the edges of the dough. Carefully braid the strips over the filling by crossing them over each other as you move down the length of the dough.
  6. Bake: Place the assembled Danish in the preheated oven and bake for 40-45 minutes, or until the dough is golden brown and the cream cheese filling is set and no longer jiggles when gently shaken.
  7. Optional glaze: While the pastry is warm, mix softened butter, ground sweetener, and vanilla extract to create a glaze. Drizzle or spread this glaze over the top of the Danish for a shiny, sweet finish. For a thicker glaze, allow the Danish to cool to room temperature before applying.

Notes

  • You can substitute Joy Filled Eats Sweetener with other keto-friendly sweeteners like erythritol or monk fruit.
  • If you do not have a food processor, mixing and kneading by hand can be done but requires a bit more effort to achieve uniform dough.
  • Do not thaw frozen blueberries before adding to prevent excess moisture in the filling.
