Ingredients
Scale
Dough:
- 8 oz shredded mozzarella (about 2 cups)
- 2 oz cream cheese
- 1 egg
- 1/3 cup almond flour
- 1/3 cup coconut flour
- 1/3 cup ground golden flaxseed (or additional almond flour)
- 1 tbsp Joy Filled Eats Sweetener (or keto-friendly sweetener alternative)
- 1 tsp vanilla extract
Cream Cheese Filling:
- 8 oz cream cheese (softened)
- 1 tsp vanilla extract
- 1 egg
- 1/4 cup Joy Filled Eats Sweetener (or keto-friendly sweetener alternative)
- 3/4 cup fresh or frozen blueberries (do not thaw if using frozen)
Optional Glaze:
- 1 tbsp softened butter
- 1 tbsp finely ground sweetener
- 1/4 tsp vanilla extract
Instructions
- Preheat the oven: Set your oven to 350°F (175°C) to prepare it for baking the Danish.
- Melt the cheese: Place shredded mozzarella and 2 oz cream cheese in a microwave-safe bowl. Microwave for 1 minute, stir, then microwave for 30 seconds. Stir again and microwave for an additional 30 seconds until the cheese is fully melted and smooth, resembling fondue.
- Prepare the dough: Transfer the melted cheese along with almond flour, coconut flour, ground flaxseed, 1 tbsp sweetener, 1 tsp vanilla, and 1 egg into a food processor fitted with the dough blade. Process until the mixture is a uniform color and consistency. If you don’t have a food processor, mix thoroughly in a medium bowl with a wooden spoon and knead by hand on wax paper until well combined. Wet your hands and press the dough into a roughly 9×12-inch rectangle on a parchment-lined baking sheet.
- Make the cream cheese filling: In the same food processor bowl (no need to wash), combine softened cream cheese, 1 tsp vanilla, 1 egg, and 1/4 cup sweetener. Blend or beat with an electric mixer until smooth and creamy.
- Assemble the Danish: Spread the cream cheese filling down the center of the dough rectangle. If the filling spreads, gently push it back to the center using a rubber spatula. Sprinkle fresh or frozen blueberries evenly over the filling. Using a sharp knife, cut 1-inch-wide strips along the edges of the dough. Carefully braid the strips over the filling by crossing them over each other as you move down the length of the dough.
- Bake: Place the assembled Danish in the preheated oven and bake for 40-45 minutes, or until the dough is golden brown and the cream cheese filling is set and no longer jiggles when gently shaken.
- Optional glaze: While the pastry is warm, mix softened butter, ground sweetener, and vanilla extract to create a glaze. Drizzle or spread this glaze over the top of the Danish for a shiny, sweet finish. For a thicker glaze, allow the Danish to cool to room temperature before applying.
Notes
- You can substitute Joy Filled Eats Sweetener with other keto-friendly sweeteners like erythritol or monk fruit.
- If you do not have a food processor, mixing and kneading by hand can be done but requires a bit more effort to achieve uniform dough.
- Do not thaw frozen blueberries before adding to prevent excess moisture in the filling.
- The optional glaze can be doubled or tripled if you prefer a sweeter finish.
- Wet your hands before pressing dough to prevent sticking and make shaping easier.
- Keep an eye on baking time, as oven temperatures may vary; look for a golden crust and set filling.
