They are easy to make and fit perfectly into a ketogenic lifestyle without sacrificing the comforting taste of the traditional biscuit.
Ingredients
Scale
Dry Ingredients
- 2 cups Wholesome Yum Blanched Almond Flour
- 2 tsp Baking powder
- 2 tsp Garlic powder
- ½ tsp Sea salt
Wet Ingredients
- 1 large Egg (whisked)
- ⅓ cup Heavy cream
- ⅓ cup Unsalted butter (melted)
Cheese
- 1½ cups Cheddar cheese (shredded)
Topping
- 3 tbsp Unsalted butter (melted)
- 1 tbsp Fresh parsley (chopped)
- ¼ tsp Garlic powder
- ⅛ tsp Sea salt (to taste)
Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 350°F (177°C) and line a baking sheet with parchment paper to prevent the biscuits from sticking.
- Mix Dry Ingredients: In a large mixing bowl, combine the blanched almond flour, baking powder, garlic powder, and sea salt, stirring well to evenly distribute all the dry ingredients.
- Add Wet Ingredients: Stir in the whisked egg, heavy cream, and melted butter into the dry mixture until the batter is uniform. Then fold in the shredded cheddar cheese carefully to keep an even distribution of cheese in the biscuit dough.
- Shape Biscuits: Using a large cookie scoop, scoop scant amounts of dough onto the parchment-lined baking sheet, spacing them at least 2 inches apart to allow for spreading. Gently shape each scoop into a rounded biscuit, slightly flatten each with your fingers but keep a rustic look.
- Bake Biscuits: Bake the biscuits in the preheated oven for 12 to 16 minutes, until they turn semi-firm and develop a golden color on top.
- Cool and Add Topping: Remove the biscuits from the oven and let them cool on the baking sheet for 10 minutes without moving them so they can firm up properly. Meanwhile, stir together the melted butter, chopped parsley, garlic powder, and sea salt for the topping. Brush this garlic-parsley butter generously over each warm biscuit before serving to enhance their flavor.
Notes
- Use blanched almond flour for the best texture—regular almond meal may produce denser biscuits.
- Do not overmix the dough once the cheese is added to maintain tenderness.
- These biscuits freeze well—store in an airtight container for up to a month and reheat in the oven or toaster oven.
- Adjust garlic powder in the dough and topping to your taste preference for milder or stronger garlic flavor.
- For a dairy-free version, substitute heavy cream and butter with coconut cream and coconut oil, respectively, and use a vegan cheddar alternative.
