- Melt the Butter: In an 8-inch round nonstick skillet over medium-low heat, melt the butter to prepare the pan for cooking the eggs.
- Cook the Eggs: Add the beaten eggs to the skillet and cook without stirring until the edges just begin to set, allowing a smooth base to form.
- Push Edges Inward: Using a silicone spatula, gently push the edges of the eggs toward the center of the pan and tilt the pan so the uncooked eggs flow to the edges evenly.
- Continue Cooking Gently: Repeat the process of pushing edges inward and tilting the pan until the eggs are mostly set but still a bit soft in the center, about 5 minutes, ensuring the bottom does not brown too much.
- Add Cheese and Herbs: Place the grated cheddar cheese and diced fresh parsley and scallions in a line down the center of the omelette. Cook for about 1 minute more until the eggs are mostly set and the cheese starts melting.
- Fold the Omelette: Slide the spatula around one side of the omelette at the edge to loosen it. Carefully slip it under, then fold the omelette in half over the filling.
