Description

A simple and classic recipe for a fluffy, cheesy omelette enhanced with fresh parsley and scallions. This quick and easy breakfast dish is cooked gently on the stovetop to achieve a tender texture with melted cheddar cheese and fresh herbs folded inside.

Ingredients

Scale

Omelette Ingredients

  • 2 large eggs
  • 1 tablespoon unsalted butter
  • 2 tablespoons freshly grated cheddar cheese (not pre-shredded packaged)
  • 1 tablespoon diced fresh parsley
  • 1 tablespoon diced scallions

Instructions

  1. Beat the Eggs: In a bowl, beat the eggs with a fork until fully combined, fluffy, and no streaks remain.
  2. Melt the Butter: In an 8-inch round nonstick skillet over medium-low heat, melt the butter to prepare the pan for cooking the eggs.
  3. Cook the Eggs: Add the beaten eggs to the skillet and cook without stirring until the edges just begin to set, allowing a smooth base to form.
  4. Push Edges Inward: Using a silicone spatula, gently push the edges of the eggs toward the center of the pan and tilt the pan so the uncooked eggs flow to the edges evenly.
  5. Continue Cooking Gently: Repeat the process of pushing edges inward and tilting the pan until the eggs are mostly set but still a bit soft in the center, about 5 minutes, ensuring the bottom does not brown too much.
  6. Add Cheese and Herbs: Place the grated cheddar cheese and diced fresh parsley and scallions in a line down the center of the omelette. Cook for about 1 minute more until the eggs are mostly set and the cheese starts melting.
  7. Fold the Omelette: Slide the spatula around one side of the omelette at the edge to loosen it. Carefully slip it under, then fold the omelette in half over the filling.
  8. Serve: Loosen the folded omelette from the pan with the spatula, tilt the pan over a plate, and gently slide or nudge the omelette onto the plate for serving.

Notes

  • Use fresh cheddar cheese for better melting and flavor compared to pre-shredded packaged cheese.
  • Cooking on medium-low heat helps avoid browning the eggs too much, keeping them tender.
  • Folding the omelette gently preserves its fluffy texture and keeps the filling neatly inside.
  • Fresh herbs like parsley and scallions add brightness and fresh flavor to the dish.
