Instructions
- Prepare the vegetables: Chop the tomatoes, cucumber, bell pepper, and red onion into medium pieces. Mince the garlic finely to release maximum flavor.
- Combine ingredients in blender: Add all the chopped vegetables and minced garlic into a blender or food processor.
- Add liquids and seasonings: Pour in the tomato juice, olive oil, and red wine vinegar. Season with salt and freshly ground black pepper to taste.
- Blend the soup: Blend until smooth and well combined. For a chunkier texture, pulse the blender a few times instead of continuous blending.
- Adjust seasoning: Taste the gazpacho and add more salt or pepper if needed to balance the flavors.
- Chill the soup: Transfer the gazpacho into a large bowl or pitcher, cover with plastic wrap, and refrigerate for at least 2 hours to allow flavors to meld and to serve it cold.
- Serve garnished: Pour the chilled gazpacho into bowls and garnish with fresh basil or parsley if desired for a touch of color and herbal note.
Notes
- For best flavor, use fresh, ripe summer tomatoes and fresh vegetables.
- You can adjust the thickness by adding more or less tomato juice depending on preference.
- Gazpacho can be made a day in advance and kept refrigerated.
