Ingredients

Scale

Main Ingredients

  • 1 large bag tortilla chips
  • 2 1/2 cups leftover or store-bought mashed potatoes, warmed
  • 2 cups shredded leftover turkey or rotisserie chicken
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded fontina, white cheddar, or gouda
  • 1 1/2 cups leftover stuffing or 1/2 (6-oz.) box stuffing, prepared according to package directions
  • 3 oz. Brussels sprouts, shredded with a knife (about 1 cup)

Condiments and Toppings

  • 1 (14-oz.) can whole cranberry sauce
  • 1 fresh jalapeño, stemmed, seeded, thinly sliced
  • 1/4 cup packed fresh cilantro leaves, chopped
  • 1/4 cup leftover or store-bought gravy
  • 1 scallion, thinly sliced
  • 1/3 cup pickled jalapeños

Instructions

  1. Preheat and Arrange: Preheat your oven to 425ºF. On a large baking sheet, spread out the tortilla chips in a single even layer to ensure they stay crispy and cook evenly.
  2. Add Mashed Potatoes: Spoon small dollops of warmed mashed potatoes over the chips, then gently spread it out in an even layer to act as a creamy base for the toppings.
  3. Layer Toppings: Sprinkle shredded turkey, sharp cheddar, fontina (or your choice of white cheddar or gouda), stuffing, and shredded Brussels sprouts evenly over the mashed potatoes and chips. This layering creates a hearty and flavorful mix.
  4. Bake Nachos: Place the baking sheet in the oven and bake the nachos for about 10 minutes, until the cheese has melted and everything is toasted and warm.
  5. Prepare Cranberry Salsa: While the nachos bake, combine the whole cranberry sauce, thinly sliced fresh jalapeño, and chopped cilantro in a medium bowl. This mixture adds a vibrant, sweet-spicy kick.
  6. Finish and Serve: Once out of the oven, drizzle the baked nachos with gravy and some of the cranberry jalapeño mixture. Sprinkle sliced scallions and pickled jalapeños over the top for acidity and crunch. Serve the remaining cranberry salsa on the side for extra flavor.

Notes

  • Use warmed leftover mashed potatoes to ensure even melting and easier spreading on the chips.
  • If you don’t have leftover turkey, rotisserie chicken works perfectly as a substitute.
  • Shredded Brussels sprouts add a fresh crunch, but you can omit or substitute with shredded kale if preferred.
  • Adjust the amount of fresh and pickled jalapeños according to your spice tolerance.
  • This recipe is great for using up Thanksgiving leftovers and can be customized with your favorite cheeses or stuffing varieties.
