  • Yield: 8 servings 1x

Description

French Silk Pie is a classic, decadent dessert featuring a rich, creamy chocolate filling set in a flaky baked pie crust, topped with luscious whipped cream and chocolate shavings. This no-bake chocolate mousse pie is silky smooth, airy, and perfect for chocolate lovers seeking an elegant and satisfying treat.

Ingredients

Scale

Pie Crust

  • 1 9-inch pie crust

Chocolate Filling

  • 3 oz unsweetened chocolate (melted and cooled)
  • 1 cup butter (softened)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large pasteurized eggs

Whipped Cream Topping

  • 1 cup heavy cream
  • 1/3 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat and bake crust: Preheat your oven to 450ºF. Press the pie crust firmly into a 9-inch pie plate, pricking the bottom and sides with a fork to prevent bubbles. Bake for 9-11 minutes until golden brown, then let it cool completely.
  2. Prepare chocolate mixture: In a stand mixer, beat the softened butter for about 2 minutes until fluffy. Gradually add granulated sugar, continuing to beat until the mixture is light and airy. Stir in the cooled melted chocolate and vanilla extract thoroughly.
  3. Add eggs: Add the pasteurized eggs one at a time to the chocolate mixture. Beat on medium-high speed for 2 minutes after each addition. The mixture should become very light and fluffy.
  4. Assemble filling: Pour the chocolate filling into the cooled pie crust. Place the pie in the refrigerator to chill while you prepare the whipped cream topping.
  5. Make whipped cream topping: In a large bowl, beat the heavy cream until soft peaks begin to form. Add powdered sugar and vanilla extract, then continue beating until stiff peaks form. Spread the whipped cream evenly over the chocolate filling. Garnish with chocolate shavings for an elegant finish.
  6. Chill before serving: Refrigerate the pie for at least 2 hours to allow the filling to set and flavors to meld. Serve chilled for best texture and taste.

Notes

  • Use pasteurized eggs to ensure food safety since the filling is not cooked after adding eggs.
  • Melt and cool the unsweetened chocolate before mixing to prevent curdling.
  • Whipped cream should be beaten carefully to avoid over-whipping and turning into butter.
  • Allow the pie to chill thoroughly for the best silky texture and flavor development.
  • Chocolate shavings can be made using a vegetable peeler on a chocolate bar.
