For Caramelized Onions
- 1 Tablespoon butter
- 2 Tablespoons olive oil
- 2 large yellow onions, finely chopped
For the Dip
- 1 cup plain Greek yogurt (245g)
- 1/2 cup sour cream (115g)
- 1/2 cup mayonnaise (120g)
- 3 garlic cloves, minced
- 2 Tablespoons chopped fresh chives
- 1 teaspoon kosher salt
- 1/4 teaspoon fresh cracked black pepper, to taste
Instructions
- Caramelize Onions: Heat the butter and olive oil in a sauté pan over low heat. Add the finely chopped onions and cook slowly, stirring every few minutes, for about 30 minutes or until the onions reach a deep rich golden caramelized color. Remove the onions from the heat and transfer them to a bowl to cool. This step can be done in advance and stored in the fridge until ready to use.
- Prepare the Dip: In a mixing bowl, combine the plain Greek yogurt, sour cream, mayonnaise, minced garlic, chopped fresh chives, and kosher salt. Stir well until blended. Gently fold in the cooled caramelized onions. Taste the dip and adjust seasoning with additional salt and black pepper as needed. Reserve a small amount of caramelized onions and chives to garnish the dip before serving.
- Refrigerate and Serve: Cover the bowl and refrigerate the dip for at least 30 minutes to allow the flavors to meld together. Serve chilled with your choice of dippers such as kettle potato chips, pretzel thins, pita bread, crackers, or fresh vegetables. Leftover dip can be used as a flavorful condiment for burgers or sandwiches and will keep refrigerated for up to 5 days.
