Instructions

  1. Preheat the oven: Set your oven to 325°F (163°C) to prepare for baking the croissants.
  2. Prepare the cheese mixture: In a food processor, combine the brie and cream cheese. Whip until smooth and creamy, ensuring there are no lumps.
  3. Make the fig chipotle jam mixture: In a separate bowl, mix together the fig jam, honey, chipotle adobo sauce, chipotle powder, and a pinch of salt until well combined and smooth.
  4. Hollow out croissants: Using a piping tip or a similar tool, carefully hollow out the bottom center of each mini croissant to create space for the filling without breaking the croissant.
  5. Prepare to fill: Transfer the whipped brie mixture to a piping bag. Use a straw or similar tool to create a well or cavity in the center of the cheese inside the piping bag and add the fig jam mixture into this well, reserving 1-2 tablespoons of the jam for brushing on top.
