Ingredients
Scale
Beef and Oil
- 2 pounds beef tips (or stewing beef), cut into 1 inch cubes
- 1 Tablespoon olive oil
Gravy and Broth
- 3 cups beef broth
- ⅓ cup red wine (optional)
- 2 ounces brown gravy mix (2 packets, adjust to taste)
- 1 ounce au jus gravy mix (1 packet)
- 1 ounce onion soup mix (1 packet)
- 21–26 ounces condensed cream of mushroom soup (2 small cans or 1 large can)
Garnish
- Chopped fresh parsley (optional)
Instructions
- Prepare the beef: Cut the beef into 1-inch cubes to ensure even cooking and tenderness throughout.
- Brown the beef: Heat olive oil in a large Dutch oven or pot over medium-high heat until shimmering. Add half of the beef tips and brown on all sides, then remove and set aside. Repeat with the remaining beef. Return all browned beef to the pot.
- Mix the gravy base: In a small bowl, combine the beef broth, red wine (if using), brown gravy mix, au jus gravy mix, and onion soup mix. Stir thoroughly to blend the dry mixes into the liquids.
- Add cream of mushroom soup and broth mixture: Pour the gravy mixture and the condensed cream of mushroom soup into the pot with the beef. Stir to combine; the mixture might look a bit lumpy at first but will smooth out during cooking.
- Simmer to tenderize: Bring the mixture to a boil over medium-high heat, then reduce the heat to low to maintain a gentle simmer. Cover and cook for 1 ½ to 2 hours, stirring occasionally until the beef is tender and the gravy has thickened.
- Serve: Spoon the beef tips and savory mushroom gravy over egg noodles, rice, or mashed potatoes. Garnish with freshly chopped parsley if desired to add a pop of color and freshness.
Notes
- Optional red wine adds depth to the gravy but can be omitted for a non-alcoholic version.
- You can adjust the amount of brown gravy mix based on your taste preferences for thickness and flavor.
- For a thicker gravy, allow it to simmer uncovered for the last 15 minutes.
- Leftovers store well and can be refrigerated for up to 3 days or frozen for up to 3 months.
- This dish pairs well with buttery egg noodles, steamed rice, or creamy mashed potatoes.
