Instructions

  1. Prepare the dates: Line a plate or small baking sheet with parchment paper to prevent sticking. Using a small paring knife, carefully make a lengthwise slit in each date, slicing about halfway but not all the way through. Pry the date open gently and remove the pit.
  2. Fill the dates: Spoon approximately ½ tablespoon of peanut butter into the cavity of each pitted date. Top the peanut butter with several roasted peanuts to add crunch. Arrange the stuffed dates on the parchment-lined plate or baking sheet and place them in the freezer until firm and completely solid, at least one hour.
  3. Melt the chocolate: Place the chocolate chips or chopped chocolate into a double boiler set over medium-low heat. Stir occasionally with a spatula as it slowly melts. Add the optional avocado or coconut oil to improve fluidity and prevent the chocolate from seizing. Pour the chocolate back over low heat if it starts to thicken, adding a bit more oil if necessary. Alternatively, melt the chocolate and oil in a microwave-safe bowl using 30-second intervals, stirring well after each until smooth.
  4. Coat the dates: Remove the frozen dates from the freezer. One by one, dip each date thoroughly into the melted chocolate, flipping it with a fork to ensure an even coating. Tap the fork gently against the side of the bowl to drip off excess chocolate. Set coated dates on parchment paper and sprinkle with flaky sea salt while the chocolate is still warm and wet. Work quickly, as the chocolate thickens upon cooling – reheat gently if needed.
  5. Store and Serve: Once coated, store the chocolates in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 4 months. Serve chilled or at room temperature according to your preference.
