Quiche Mixture
- 5 large eggs (~50 – 55g / 2oz each)
- 1 cup heavy cream (or half the amount if substituting milk)
- 1/4 tsp salt
- 1/2 tsp black pepper
Fillings
- 100g (3.5 oz) diced ham
- 1 cup shredded cheese (any melty cheese except mozzarella)
- 1 green onion, sliced
Instructions
- Preheat and Prepare: Preheat the oven to 180°C/350°F (160°C for fan-forced ovens). Grease a 22.5cm (9-inch) pie dish with butter or lightly spray it with oil to prevent sticking.
- Mix Egg Custard: In a bowl, whisk together the eggs, heavy cream, salt, and black pepper until fully combined and smooth.
- Add Fillings to Pie Dish: Scatter most of the diced ham, shredded cheese, and sliced green onion evenly in the prepared pie dish, distributing the flavors well.
- Pour Egg Mixture: Carefully pour the egg and cream mixture over the ham, cheese, and onion in the pie dish. Then top with the remaining ham, cheese, and green onion to create a layer on top.
- Bake: Place the pie dish in the oven and bake for approximately 35 minutes or until the top is golden brown and the center is just set but still slightly wobbly — avoid overcooking to maintain the custardy texture.
- Rest: Remove the quiche from the oven and allow it to rest for 5 minutes; it will deflate slightly during this time.
- Serve: Slice the quiche and serve warm. It pairs beautifully with a simple side salad, or it can be cut and used as a filling for soft rolls or burritos. For burritos, pan-fry to crisp the outside.
