Ingredients
Scale
Chutney Ingredients
- 1/2 cup cranberry juice cocktail
- 1/4 cup apple cider vinegar
- 12 oz fresh cranberries (1 package)
- 3/4 cup brown sugar
- 1 small apple, diced
- 1/2 cup golden raisins
- Zest of one orange
- Dash of cinnamon (more to taste)
Crostini Ingredients
- 1 baguette (approx. 12 oz.)
- 5–6 oz Brie
- 1–2 tablespoons olive oil
- 1/4 cup chopped pecans
- Rosemary sprig (for garnish)
- Extra orange zest (for garnish)
Instructions
- Prepare the Cranberry Chutney: In a saucepan, combine cranberry juice cocktail, apple cider vinegar, fresh cranberries, brown sugar, diced apple, golden raisins, orange zest, and a dash of cinnamon. Stir well and bring the mixture to a boil over medium-high heat, stirring occasionally until the cranberries begin to pop. Reduce heat to low and simmer for about 15 minutes, or until the chutney thickens. Remove from heat and transfer to a bowl; chill until completely cooled. The chutney can be made 1-2 days ahead.
- Preheat the Oven: Set your oven to 375°F (190°C) to prepare for toasting the crostini.
- Slice and Oil the Baguette: Slice the baguette diagonally into pieces about 1/2 to 3/4 inch thick, removing the ends. Arrange the slices on a parchment-lined baking sheet. Evenly brush each slice with olive oil to ensure crispness and flavor.
- Top with Brie: Place slices of Brie cheese over each baguette slice, covering them adequately for a melty, creamy topping.
- Bake the Crostini: Bake the prepared crostini in the preheated oven for 5-7 minutes, or until the Brie is melted and slightly bubbly. Remove from the oven carefully.
- Add Chutney and Garnishes: Spoon a generous amount of the chilled cranberry chutney on top of each melted Brie crostini. Sprinkle with chopped pecans, additional orange zest, and garnish with a small sprig of fresh rosemary for aroma and visual appeal.
- Serve: Serve the cranberry Brie crostini immediately while warm to enjoy the contrast of melted cheese, sweet-tart chutney, and crunchy pecans.
Notes
- The cranberry chutney can be prepared 1-2 days in advance; just keep it refrigerated until ready to use.
- For a nut-free option, omit the pecans or substitute with toasted seeds like pumpkin or sunflower seeds.
- You can switch out the olive oil for melted butter on the baguette slices for a richer flavor.
- If Brie rind is strong for your taste, you can remove it before placing cheese on the crostini.
- Make sure to serve crostini warm for best texture and flavor.
