Instructions

  1. Preheat and prepare trays: Preheat your oven to 180°C (350°F) and line two baking trays with parchment paper for easy cleanup and even baking.
  2. Prepare filo sheets: Lay the thawed filo sheets flat on your work surface. Cut each sheet into 3 lengthwise strips, then cut each strip in half widthwise to create 36 squares in total.
  3. Assemble crackers: Place one filo square on the surface and keep the remaining sheets covered with a damp towel to prevent drying. Brush the square with melted butter. Add a slice of brie, a teaspoon of cranberry sauce, and a teaspoon of flaked almonds at one end of the square, then carefully roll up the pastry. Pinch the ends to seal and form a cracker shape. Repeat this process with all the filo sheets.
  4. Prepare for baking: Arrange the rolled filo crackers on the lined trays. Brush the tops with the remaining melted butter, then sprinkle evenly with black sesame seeds to add flavor and texture.
  5. Bake until golden: Place the trays in the oven and bake for 15 to 20 minutes until the filo turns a beautiful golden brown and is crisp to the touch.
