Ingredients
Scale
Seafood and Main Ingredients
- 4 Salmon Filets
- 8 oz Jumbo Lump Crab Meat
- 1/2 lb Shrimp
Dairy and Cheeses
- 8 oz Cream Cheese
- 3 Tablespoons Butter
- 1/4 Cup Fontina Cheese, Shredded
- 1/4 Cup Gruyere Cheese, Shredded
- 1/2 Cup Parmesan Cheese, Grated
Vegetables and Herbs
- 1 bag Frozen Spinach
- 1/4 Cup Fresh Parsley, Chopped
- 3 Tablespoons Minced Garlic
Seasonings and Others
- 2 Tablespoons Fresh Lemon and Lime Juice
- 1 Tablespoon Seafood Seasoning
- 1 Teaspoon Onion Powder
- 2 Teaspoons Paprika, divided
- Salt and Pepper to Taste
Instructions
- Preheat and Prepare Herbs: Preheat your oven to 350°F (175°C). Chop the fresh parsley and set aside for later use.
- Season Shrimp: Season the shrimp with salt and pepper to taste, then set aside while preparing the stuffing.
- Sauté Shrimp and Spinach: In a sauté pan over medium heat, melt 2 tablespoons of butter. Add minced garlic and 1 teaspoon of paprika, cooking for about 30 seconds without burning the garlic. Add the seasoned shrimp and the frozen spinach to the pan. Cook for approximately 3 minutes, or until the shrimp turn brown. Remove from heat and set aside.
- Make the Stuffing: In a large mixing bowl, soften the cream cheese by mixing it with fresh parsley and lemon-lime juice. Gently fold in the jumbo lump crab meat, shrimp and spinach mixture, shredded Fontina, Gruyere, Parmesan cheeses, onion powder, paprika (remaining 1 teaspoon), and salt and pepper. Mix just until combined to maintain a chunky texture.
- Assemble the Salmon: Grease an oven-safe baking dish. Lay the salmon filets in the dish and season each filet with salt, pepper, and seafood seasoning. Spread about three-quarters of the stuffing evenly on top of one salmon filet, covering its surface completely. Place the second salmon filet on top, forming a stuffed salmon stack.
- Bake the Salmon: Dot the top salmon filet with a tablespoon of butter. Bake in the preheated oven for 20 minutes, until the salmon is cooked through and the stuffing is heated.
- Broil for Finish: Remove the salmon from the oven and spread the remaining stuffing on top. Broil on high for about 5 minutes or until the top is golden-brown and bubbly.
- Garnish and Serve: Finish with a sprinkle of fresh parsley for brightness and serve immediately, enjoying the rich flavors and textures.
Notes
- Ensure garlic is sautéed briefly to avoid bitterness.
- Frozen spinach should be well drained to prevent watery stuffing.
- Adjust seafood seasoning based on preference and saltiness of cheeses.
- Baking time may vary slightly depending on salmon thickness.
- Broiling at the end adds a delicious golden crust but watch closely to prevent burning.
