Instructions

  1. Preheat and Prepare Herbs: Preheat your oven to 350°F (175°C). Chop the fresh parsley and set aside for later use.
  2. Season Shrimp: Season the shrimp with salt and pepper to taste, then set aside while preparing the stuffing.
  3. Sauté Shrimp and Spinach: In a sauté pan over medium heat, melt 2 tablespoons of butter. Add minced garlic and 1 teaspoon of paprika, cooking for about 30 seconds without burning the garlic. Add the seasoned shrimp and the frozen spinach to the pan. Cook for approximately 3 minutes, or until the shrimp turn brown. Remove from heat and set aside.
  4. Make the Stuffing: In a large mixing bowl, soften the cream cheese by mixing it with fresh parsley and lemon-lime juice. Gently fold in the jumbo lump crab meat, shrimp and spinach mixture, shredded Fontina, Gruyere, Parmesan cheeses, onion powder, paprika (remaining 1 teaspoon), and salt and pepper. Mix just until combined to maintain a chunky texture.
  5. Assemble the Salmon: Grease an oven-safe baking dish. Lay the salmon filets in the dish and season each filet with salt, pepper, and seafood seasoning. Spread about three-quarters of the stuffing evenly on top of one salmon filet, covering its surface completely. Place the second salmon filet on top, forming a stuffed salmon stack.
  6. Bake the Salmon: Dot the top salmon filet with a tablespoon of butter. Bake in the preheated oven for 20 minutes, until the salmon is cooked through and the stuffing is heated.
  7. Broil for Finish: Remove the salmon from the oven and spread the remaining stuffing on top. Broil on high for about 5 minutes or until the top is golden-brown and bubbly.
  8. Garnish and Serve: Finish with a sprinkle of fresh parsley for brightness and serve immediately, enjoying the rich flavors and textures.
