Ingredients
Scale
Roasted Tomatoes
- 12 oz cherry tomatoes
- 2 fresh garlic cloves, sliced or minced
- 1 tbsp olive oil
- 1/4 tsp dried basil
- 1/4 tsp dried oregano
Toast Assembly
- 2 slices of sourdough bread, toasted
- 1/2 cup cottage cheese
- Balsamic glaze, for drizzling
- Fresh basil, to garnish
- Flakey sea salt, to taste
- Black pepper, to taste
Instructions
- Preheat the Oven: Set your oven to 400 degrees Fahrenheit to prepare for roasting the tomatoes.
- Roast the Tomatoes: In a small baking dish, combine the cherry tomatoes, olive oil, sliced or minced garlic, dried basil, and dried oregano. Mix well so the tomatoes are evenly coated with the herbs and oil. Place the dish in the preheated oven and bake for 20-25 minutes, until the tomatoes are softened and slightly caramelized.
- Prepare the Toast: While the tomatoes roast, toast the sourdough slices to your desired level of crispiness. Then evenly spread the 1/2 cup of cottage cheese over each slice.
- Assemble the Caprese Toast: Once the tomatoes are roasted, spoon them generously over the cottage cheese layer on your toasted bread. Drizzle balsamic glaze over the tomatoes for a tangy sweetness, then garnish with fresh basil leaves. Sprinkle flakey sea salt and black pepper to taste. Optionally, add more dried herbs if preferred.
- Serve: Serve immediately to enjoy the warm, flavorful roasted tomatoes combined with the cool cottage cheese and fresh herbs. Perfect for a delicious snack or light meal.
Notes
- You can substitute sourdough with any crusty bread like ciabatta or baguette.
- For extra flavor, add a sprinkle of crushed red pepper flakes before roasting the tomatoes.
- Use low-fat cottage cheese for a lighter version of this recipe.
- Balsamic glaze can be replaced with balsamic vinegar reduction or a simple drizzle of aged balsamic vinegar.
- Make sure to use fresh basil for best taste, but dried basil can be added if fresh is unavailable.
