- 1/2 cup reserved pasta cooking water (as needed)

- Blend the base: In a high-speed blender, combine the milk and cottage cheese and blend until smooth, creating the base for your Alfredo sauce.
- Sauté the garlic: Heat the olive oil in a medium saucepan over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.
- Combine and melt cheese: Reduce heat to low and pour in the blended cottage cheese mixture along with the parmesan cheese and Italian seasoning. Stir gently to melt the parmesan cheese without overheating to prevent the sauce from curdling.
- Cook the pasta: Meanwhile, cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water before draining the pasta. Rinse the noodles with cool water to stop cooking.
- Toss pasta with sauce: Return the pasta to the pan with the Alfredo sauce over low heat. Toss until the pasta is warmed through to your liking, adding reserved pasta water as needed to achieve desired sauce consistency. Avoid overheating the sauce to prevent separation.
