  • 6 oz dark chocolate (60% cacao; good-quality chips or chopped bars)
  • 1 tbsp refined coconut oil

Topping

  • 2 tbsp mini rainbow-colored chocolate chips

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the almond flour, chocolate protein powder, unsweetened cocoa powder, and kosher salt until evenly combined.
  2. Add Wet Ingredients: Add the almond butter, almond milk, maple syrup, and vanilla extract to the dry mixture. Using a rubber spatula, fold all ingredients together thoroughly until a well-combined dough forms.
  3. Form Bites: Scoop out heaping tablespoons (about 20 grams each) of the dough and roll into balls. You should have about 12 balls. Place them on a parchment-lined baking sheet. If the balls are sticky or soft, freeze them for 15 minutes to firm up before proceeding.
  4. Melt Chocolate Coating: In a medium heatproof bowl, microwave the dark chocolate and refined coconut oil in 30-second increments, stirring between each, until the mixture is melted and smooth, about 90 seconds total.
  5. Coat Bites with Chocolate: Working one at a time, dip the brownie bites into the melted chocolate and use a spoon to coat each bite thoroughly. Lift each bite out using a fork and allow the excess chocolate to drip off. Return the coated bites to the baking sheet.
  6. Add Toppings: While the chocolate is still wet, sprinkle the mini rainbow-colored chocolate chips over the bites to decorate.
  7. Set and Store: Let the chocolate set at room temperature for a few minutes, then refrigerate the bites for at least 30 minutes until the chocolate hardens. Store the protein bites in an airtight container in the refrigerator for up to one week.
