Description

These Cinnamon Apple Cottage Cheese Bites are a delicious and nutritious snack or breakfast option. Packed with protein from cottage cheese, fiber from oats, and natural sweetness from apple and cinnamon, they offer a healthy, gluten-free treat that’s easy to make and perfect for on-the-go.

Ingredients

Scale

Dry Ingredients

  • 1 cup rolled oats
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • Pinch of salt

Wet Ingredients

  • 1 cup cottage cheese
  • 1/2 cup applesauce or 1 small grated apple
  • 1 large egg
  • 1 tbsp honey or maple syrup (optional, for added sweetness)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners to prevent sticking.
  2. Mix the ingredients: In a mixing bowl, combine the cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup (if using), baking powder, and salt. Stir until all ingredients are thoroughly mixed.
  3. Let the batter rest: Allow the batter to sit for 5 minutes so the oats can absorb moisture and soften, resulting in a better texture.
  4. Fill the muffin pan: Scoop the mixture evenly into the prepared mini muffin pan, filling each cup almost to the top to ensure well-formed bites.
  5. Bake: Bake for 18 to 20 minutes, or until the bites are set and have turned lightly golden on top.
  6. Cool: Let the bites cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  7. Serve or store: Enjoy the bites warm, or store them in an airtight container in the fridge for up to 4 days for a convenient snack.

Notes

  • For a vegan version, substitute the egg with a flax egg and use maple syrup instead of honey.
  • You can add a handful of chopped nuts or raisins for extra texture.
  • These bites freeze well; store in a freezer-safe container for up to 1 month and reheat before serving.
  • Use gluten-free oats to keep the recipe gluten free.
  • Adjust cinnamon amount to taste for more or less spice.
