Chocolate Layer

  • 1 Cup Chocolate Chips
  • 1 Tablespoon Coconut Oil

Instructions

  1. Pumpkin Spice Filling: Start by microwaving the almond butter for about 30 seconds to soften it, which helps it blend smoothly. In a bowl, combine the warmed almond butter, pumpkin puree, honey, and pumpkin spice. Use a whisk or hand mixer to blend the ingredients until smooth and creamy. Set this mixture aside while preparing the chocolate.
  2. Melting Chocolate: Place the chocolate chips and coconut oil in a small heatproof glass bowl. Microwave in 20-second increments, stirring between intervals, until the chocolate is melted and fully smooth.
  3. Assembling Chocolate Pumpkin Cups: Pour a thin layer of the melted chocolate into each silicone mold or mini cupcake liner. Place the molds in the freezer for about 10 minutes to let the chocolate set firmly.
  4. Adding Filling: Transfer the pumpkin spice mixture into a plastic baggie and cut a small hole in one corner. Pipe the filling evenly over the set chocolate layer in each mold. Return the molds to the freezer and allow them to set for 5 to 10 minutes.
