Instructions

  1. Melt the Base: In a medium saucepan over low heat, melt the butter and mini marshmallows while stirring constantly until the mixture is smooth and fully combined.
  2. Add Peanut Butter: Stir in the creamy peanut butter and vanilla extract (if using) until the mixture is fully combined and creamy in texture.
  3. Mix with Cereal: Pour the Rice Krispies cereal into a large mixing bowl. Add the peanut butter and marshmallow mixture and gently fold to coat all the cereal evenly without crushing the pieces.
  4. Shape the Cups: Line a muffin tin with paper liners. Evenly spoon the coated cereal mixture into each muffin cup and press down gently to flatten the tops.
  5. Add Chocolate Layer: Melt the chocolate chips using a microwave in 20-second intervals, stirring between each interval until smooth. Spoon the melted chocolate over each Rice Krispie cup and spread evenly. Optionally, sprinkle a pinch of sea salt on top for contrast.
