For the Sandwich
- 1 tablespoon olive oil
- 2 slices sourdough bread
- 1/4 avocado, sliced
- 2 ounces smoked chicken breast, sliced
- 3 Peppadew peppers, sliced
- 1 tablespoon fresh chopped cilantro
- 1 slice Chao creamy original cheese
For the Chipotle Sauce
- 1 – 2 tablespoons chipotle sauce
- 1 tablespoon chipotle adobo sauce
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1/4 teaspoon coarse salt
Instructions
- Prepare the Chipotle Sauce: In a small bowl, stir together the chipotle sauce, chipotle adobo sauce, mayonnaise, lemon juice, minced garlic, and coarse salt until smooth. Taste and adjust the seasoning as needed. Set aside to let the flavors meld.
- Heat the Skillet and Prepare Bread: Heat a large skillet over medium-high heat. Brush the olive oil onto the outer sides of each slice of sourdough bread to ensure a crispy golden crust.
- Assemble the Sandwich: Place one slice of bread oil-side down in the heated skillet. Layer the slice of Chao creamy cheese first, then add the smoked chicken breast slices, followed by the sliced avocado, Peppadew peppers, and fresh cilantro. Spread the chipotle sauce on the inside of the second slice of bread, then place it chipotle sauce side down on top of the layered ingredients.
- Cook Until Golden and Melted: Cook the sandwich for several minutes until the bottom slice of bread is golden brown and the cheese starts to melt. Carefully flip the sandwich using a spatula and continue cooking until the other side is toasted and the cheese is fully melted.
