Ingredients
Scale
Ingredients
- ½ cup (1 stick / 113 g) unsalted butter
- 2 cups (340 g) butterscotch chips
- ¾ cup (190 g) creamy peanut butter
- 4 cups (200 g) miniature marshmallows
Instructions
- Prepare the baking pan: Line an 8×8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal later.
- Melt butter, butterscotch, and peanut butter: In a large microwave-safe bowl, combine the butter, butterscotch chips, and creamy peanut butter. Microwave in 30-second intervals, stirring after each, until the mixture is smooth and fully melted, approximately 1 to 1½ minutes total.
- Cool the mixture: Let the melted mixture sit at room temperature for 10-15 minutes to prevent the marshmallows from melting when added.
- Fold in marshmallows: Gently fold the miniature marshmallows into the cooled butterscotch-peanut butter mixture until they are fully coated.
- Transfer and chill: Pour and press the mixture evenly into the lined baking pan using a spatula. Refrigerate for at least 2 hours until firm and set.
- Cut and serve: Use the parchment paper overhang to lift the bars out of the pan, then cut into squares to serve.
Notes
- Ensure the melted mixture cools enough before adding marshmallows to maintain their shape and texture.
- You can substitute peanut butter with almond butter for a different flavor profile.
- Store bars in an airtight container in the refrigerator for up to one week.
- For a firmer texture, chill overnight.
- To add crunch, sprinkle chopped nuts on top before chilling.
