  • Total Time: 35 minutes
  • Yield: 12 bites 1x

Description

Buffalo Blitz Bites are deliciously spicy, cheesy puff pastry bites filled with a creamy blend of rotisserie chicken, cheddar, blue cheese, and Cajun seasoning. These savory appetizers feature a crispy golden crust with a tangy carrot and celery slaw on top, served alongside ranch dressing for the perfect game day or party snack.

Ingredients

Scale

Vegetable Slaw

  • 1 large carrot, peeled, grated (optional)
  • 1 large stalk celery, thinly sliced
  • 2 tbsp apple cider vinegar
  • Kosher salt, to taste

Filling

  • 6 oz cream cheese, softened
  • 6 tbsp unsalted butter, melted
  • 1/3 cup hot sauce
  • 1 1/2 tsp store-bought or homemade Cajun seasoning
  • 2 1/4 cups chopped rotisserie chicken (about 12 oz)
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup blue cheese crumbles, plus more for serving
  • 4 tbsp sliced chives, divided

Pastry and Garnish

  • All-purpose flour, for dusting surface
  • 1 (8 1/2-oz.) sheet puff pastry
  • Cooking spray
  • Ranch dressing, for serving

Instructions

  1. Prepare the vegetable slaw: In a small bowl, toss together the grated carrot, thinly sliced celery, apple cider vinegar, and a pinch of kosher salt. Set this mixture aside until ready to serve to allow the flavors to meld.
  2. Make the filling: In a large bowl, stir the softened cream cheese, melted unsalted butter, hot sauce, and Cajun seasoning until smooth and thoroughly combined. Fold in the chopped rotisserie chicken, shredded cheddar, blue cheese crumbles, and 3 tablespoons of sliced chives until the mixture is evenly distributed.
  3. Prepare the puff pastry: Lightly flour a clean surface and roll out the puff pastry sheet into a 12-inch by 10-inch rectangle. Using a bench scraper or sharp knife, cut the dough into 12 equal squares.
  4. Assemble the bites: Spray a standard 12-cup muffin tin with cooking spray. Place one puff pastry square into each muffin cup, gently pressing down to line the bottom and sides of the cup. Fill each pastry cup with the chicken and cheese mixture evenly.
  5. Bake: Preheat the oven to 450°F (232°C). Bake the filled bites for 17 to 20 minutes or until the puff pastry is golden brown and the filling is bubbling. Once baked, allow the bites to cool in the muffin tin for 5 to 10 minutes to set.
  6. Serve: Carefully transfer the bites to a serving platter. Top each bite with the reserved carrot and celery slaw mixture and sprinkle with the remaining 1 tablespoon of sliced chives. Serve warm alongside ranch dressing for dipping.

Notes

  • The grated carrot in the slaw is optional but adds a nice sweet crunch and balances the heat.
  • Use homemade or store-bought Cajun seasoning depending on your preference for spice level.
  • Ensure the cream cheese is fully softened for easier mixing.
  • Chilling the puff pastry briefly before cutting can help with handling if it’s too soft.
  • Serve immediately after baking for the best crispiness; leftovers can be reheated in the oven.
