Instructions
- Make Blueberry Sauce: Add the fresh blueberries and honey (or your preferred sweetener) into a medium-sized bowl. Microwave for 30-60 seconds until the blueberries start to expand and some burst. Mash the berries using a slotted metal spoon or potato masher until you achieve a thick sauce. Stir in the freshly squeezed lemon juice, vanilla extract, and a pinch of salt. Place the sauce in the freezer for 15-20 minutes to cool completely.
- Mix Goat Cheese: Cut the goat cheese into 6 pieces and gently fold them into the cooled blueberry sauce. Stir until just combined; the mixture will remain a bit clumpy with visible chunks of goat cheese. If needed, return the mixture to the freezer for another 15 minutes to firm it up.
- Form into Log: Lay out two 15-inch pieces of plastic wrap overlapping in a plus sign on a flat surface. Place the blueberry goat cheese mixture in the center of the horizontal plastic wrap forming a rough log shape. Wrap the mixture tightly with the horizontal wrap, reinforcing the log shape, then wrap it again with the vertical piece. Twist the ends of the plastic wrap tightly to seal the log.
- Refrigerate and Serve: Refrigerate the wrapped log for 2 to 4 hours or freeze for 30-45 minutes until firm. Before serving, let the log come to room temperature. Serve with crackers and enjoy this creamy, fruity appetizer.
