Instructions

  1. Prepare baking pan: Line a 9-inch by 9-inch square pan with parchment paper to prevent sticking and make removal easier.
  2. Melt butter: In a large pot or saucepan over medium heat, melt the 6 tablespoons of unsalted butter until fully liquefied.
  3. Add vanilla and marshmallows: Stir in 1 teaspoon of vanilla extract. Then add all 16 ounces of mini marshmallows to the melted butter and continuously stir until the marshmallows have completely melted and the mixture is smooth without visible lumps.
  4. Mix in cereal and cookies: Remove the pot from heat and immediately add 5 cups of Rice Krispies cereal and 1/2 cup crushed Lotus Biscoff cookies. Stir well until everything is evenly combined.
  5. Transfer to pan: Pour the mixture into the prepared pan. Using a rubber spatula, gently and evenly spread the mixture in the pan without packing it tightly to maintain fluffiness. If the mixture sticks to the spatula or fingers, lightly dab with water to ease spreading.
  6. Melt white chocolate: Melt 8 ounces of white melting chocolate either in the microwave following package directions or over a double boiler until smooth.
  7. Decorate: Spread a thin layer of the melted white chocolate evenly over the Rice Krispies treats. Drizzle 1/4 cup Lotus Biscoff spread in lines across the treats in one direction. Use a toothpick to drag through the drizzled spread in alternating opposite directions, creating a beautiful swirl design. Sprinkle additional crushed Biscoff cookies on top as desired.
  8. Chill and set: Place the pan in the refrigerator for 15 to 20 minutes or until the chocolate topping is set and firm to the touch.
