  • Total Time: 25 minutes
  • Yield: 6 burritos 1x

Description

This classic Beef Burrito recipe features seasoned ground beef, refried beans, rice, and cheese wrapped in warm flour tortillas and baked to golden, melty perfection. A quick and satisfying meal that’s perfect for a weeknight dinner or casual gathering, customizable with your favorite toppings like sour cream, guacamole, and hot sauce.

Ingredients

Scale

Main Ingredients

  • 1 pound lean ground beef
  • ½ yellow onion, chopped
  • 1 ounce taco seasoning (1 packet)
  • 2 tablespoons minced fresh cilantro
  • 6 burrito-sized flour tortillas
  • 16 ounces refried beans, warmed (1 can)
  • 1½ cups shredded Mexican cheese blend
  • 2 cups cooked rice
  • 1 cup salsa

Optional Toppings

  • Sour cream, for serving
  • Hot sauce, for serving
  • Guacamole, for serving

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Cook Beef and Onion: Heat a large skillet over medium-high heat. Add the ground beef and chopped onion. Cook, breaking the beef apart with a spoon, until the meat is browned and no longer pink, about 7-10 minutes.
  3. Season Beef: Sprinkle in the taco seasoning packet and cook for an additional minute to combine the flavors. Remove from heat and stir in the minced fresh cilantro.
  4. Assemble Burritos: Lay a tortilla flat on your work surface. Spread a layer of warmed refried beans evenly over the tortilla, then add a scoop of cooked rice, followed by the seasoned beef mixture. Sprinkle with shredded Mexican cheese and spoon salsa on top.
  5. Wrap Burritos: Fold the sides of the tortilla inward and then roll it up tightly from one end to the other to enclose the fillings. Place the wrapped burritos seam-side down on the parchment-lined baking sheet. Repeat with remaining tortillas and fillings.
  6. Bake: Place the baking sheet in the preheated oven and bake the burritos for 5-10 minutes, or until the cheese has melted and the tortillas are slightly crispy.
  7. Serve: Remove the burritos from the oven and serve hot with optional sour cream, guacamole, and hot sauce for added flavor.

Notes

  • For extra crispy burritos, brush the tortillas lightly with oil before baking.
  • You can substitute ground turkey or chicken for a leaner option.
  • Leftover burritos can be wrapped tightly in foil and refrigerated for up to 3 days.
  • Warm the refried beans before spreading to help them spread more easily and blend better with other ingredients.
  • Customize your burritos by adding diced tomatoes, lettuce, or jalapeños if desired.
