Ingredients
Scale
Main Ingredients
- 1 pound lean ground beef
- ½ yellow onion, chopped
- 1 ounce taco seasoning (1 packet)
- 2 tablespoons minced fresh cilantro
- 6 burrito-sized flour tortillas
- 16 ounces refried beans, warmed (1 can)
- 1½ cups shredded Mexican cheese blend
- 2 cups cooked rice
- 1 cup salsa
Optional Toppings
- Sour cream, for serving
- Hot sauce, for serving
- Guacamole, for serving
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Cook Beef and Onion: Heat a large skillet over medium-high heat. Add the ground beef and chopped onion. Cook, breaking the beef apart with a spoon, until the meat is browned and no longer pink, about 7-10 minutes.
- Season Beef: Sprinkle in the taco seasoning packet and cook for an additional minute to combine the flavors. Remove from heat and stir in the minced fresh cilantro.
- Assemble Burritos: Lay a tortilla flat on your work surface. Spread a layer of warmed refried beans evenly over the tortilla, then add a scoop of cooked rice, followed by the seasoned beef mixture. Sprinkle with shredded Mexican cheese and spoon salsa on top.
- Wrap Burritos: Fold the sides of the tortilla inward and then roll it up tightly from one end to the other to enclose the fillings. Place the wrapped burritos seam-side down on the parchment-lined baking sheet. Repeat with remaining tortillas and fillings.
- Bake: Place the baking sheet in the preheated oven and bake the burritos for 5-10 minutes, or until the cheese has melted and the tortillas are slightly crispy.
- Serve: Remove the burritos from the oven and serve hot with optional sour cream, guacamole, and hot sauce for added flavor.
Notes
- For extra crispy burritos, brush the tortillas lightly with oil before baking.
- You can substitute ground turkey or chicken for a leaner option.
- Leftover burritos can be wrapped tightly in foil and refrigerated for up to 3 days.
- Warm the refried beans before spreading to help them spread more easily and blend better with other ingredients.
- Customize your burritos by adding diced tomatoes, lettuce, or jalapeños if desired.
