Description

Bananas Foster French Toast is a decadent breakfast treat featuring rich challah bread soaked in a spiced egg custard, pan-fried to golden perfection, and topped with a luscious caramelized banana and brown sugar sauce. This recipe combines the indulgent flavors of classic bananas foster with the comforting texture of French toast for a delightful morning indulgence.

Ingredients

Scale

French Toast Batter

  • 2 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • Pinch fine sea salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon allspice

French Toast

  • Challah bread, cut into 6 slices each 1/2-inch thick
  • Unsalted butter, for frying
  • Vegetable oil, for frying

Bananas Foster Topping

  • 4 tablespoons (57 grams) unsalted butter
  • 1/4 cup (50 grams) light brown sugar
  • 2 firm bananas, sliced
  • Pinch of cinnamon

Instructions

  1. Prepare the egg mixture: In a large shallow bowl or dish, whisk together the eggs, whole milk, vanilla extract, sea salt, cinnamon, and allspice until smooth and well blended.
  2. Soak the bread: Submerge as many slices of challah bread as will fit into the egg mixture, allowing them to soak for 5 minutes. Turn the slices once halfway through to ensure both sides absorb the custard evenly.
  3. Preheat the oven: Set your oven to 250°F (120°C) to keep the cooked French toast warm after frying.
  4. Cook the French toast: Heat 1 tablespoon unsalted butter and 1 tablespoon vegetable oil in a large sauté pan or griddle over medium heat. Add the soaked bread slices to the pan and cook for 2 to 3 minutes on each side until they develop a deep golden brown crust. Add more butter and oil as needed while cooking the remaining slices. Once all slices are cooked, transfer them to a baking tray and place in the warm oven.
  5. Prepare the bananas foster sauce: In a small skillet, melt the 4 tablespoons of unsalted butter over medium heat. Stir in the light brown sugar until it dissolves and forms a smooth caramel sauce.
  6. Caramelize the bananas: Add the sliced bananas to the skillet with the caramel sauce, gently stirring to coat them evenly. Sprinkle a pinch of cinnamon over the bananas and cook just until they are warmed through and slightly softened but not mushy.
  7. Assemble and serve: Spoon the warm bananas foster topping generously over the French toast slices and serve immediately for a delightful breakfast experience.

Notes

  • Use firm bananas to prevent them from becoming too mushy during caramelization.
  • Challah bread’s rich texture enhances the custard soak and frying results but you can substitute brioche if needed.
  • Keeping the finished French toast warm in the oven allows you to cook all slices across batches without them cooling down.
  • For an adult version, consider adding a splash of dark rum to the caramel sauce during cooking, but omit it for family-friendly servings.
  • Serve with powdered sugar or a drizzle of maple syrup for extra sweetness if desired.
