Ingredients
Scale
Wet Ingredients
- 2 large eggs
- 1 cup granulated sugar
- 1/2 cup canola oil
- 1 cup plain goat milk yogurt, plus more for topping
- 1 teaspoon vanilla extract
- 1/2 cup apricot preserves
Dry Ingredients
- 1 1/2 cups all-purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon kosher salt
Optional Garnish
- Dried apricots
- Fresh mint leaves
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Generously grease a 9-inch round cake pan with baking spray to prevent sticking.
- Mix Wet Ingredients: In a large bowl, whisk together the eggs, granulated sugar, canola oil, plain goat milk yogurt, vanilla extract, and apricot preserves until the mixture is smooth and fully combined.
- Add Dry Ingredients: Gradually add the all-purpose flour, baking powder, and kosher salt to the wet mixture. Stir gently until just combined; be careful not to overmix. The batter should be somewhat runny.
- Bake the Cake: Pour the batter into the prepared cake pan evenly. Place it into the preheated oven and bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the cake to cool in the pan for about 10 minutes. Then carefully invert it onto a large plate. Optionally, garnish with dried apricots and fresh mint leaves, and add a dollop of yogurt on top if desired. Enjoy your apricot snacking cake!
Notes
- Ensure not to overmix the batter to keep the cake tender and light.
