Description

This Apricot Snacking Cake is a moist, flavorful one-bowl cake that’s perfect for any time of the day. Made with simple ingredients like yogurt, apricot preserves, and a hint of vanilla, this easy-to-make cake requires minimal preparation and bakes into a tender treat that’s ideal for snacking or dessert. It’s garnished optionally with dried apricots and fresh mint leaves for a beautiful presentation.

Ingredients

Scale

Wet Ingredients

  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup canola oil
  • 1 cup plain goat milk yogurt, plus more for topping
  • 1 teaspoon vanilla extract
  • 1/2 cup apricot preserves

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon kosher salt

Optional Garnish

  • Dried apricots
  • Fresh mint leaves

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Generously grease a 9-inch round cake pan with baking spray to prevent sticking.
  2. Mix Wet Ingredients: In a large bowl, whisk together the eggs, granulated sugar, canola oil, plain goat milk yogurt, vanilla extract, and apricot preserves until the mixture is smooth and fully combined.
  3. Add Dry Ingredients: Gradually add the all-purpose flour, baking powder, and kosher salt to the wet mixture. Stir gently until just combined; be careful not to overmix. The batter should be somewhat runny.
  4. Bake the Cake: Pour the batter into the prepared cake pan evenly. Place it into the preheated oven and bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool and Serve: Allow the cake to cool in the pan for about 10 minutes. Then carefully invert it onto a large plate. Optionally, garnish with dried apricots and fresh mint leaves, and add a dollop of yogurt on top if desired. Enjoy your apricot snacking cake!

Notes

  • Ensure not to overmix the batter to keep the cake tender and light.
  • If goat milk yogurt is unavailable, plain whole milk yogurt can be used as a substitute.
  • You can substitute apricot preserves with peach or orange marmalade for a different flavor.
  • Store leftovers in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.
  • This cake can also be served warm or chilled, according to your preference.
