Ingredients
Scale
Meat
- 6 slices bacon
Egg Mixture
- 4 large eggs
- 1 tablespoon milk
- 1/2 teaspoon salt
- 1 cup shredded cheddar cheese
- 2 tablespoons diced green chiles (from a can)
Dough
- 1 can refrigerated flaky layers biscuit dough (8 count)
Topping
- 4 tablespoons butter (melted)
- 1 tablespoon maple syrup
Instructions
- Cook the bacon: Place the bacon slices in the air fryer basket in a single layer. Air fry at 400°F (204°C) for 8 minutes until crispy.
- Prepare bacon pieces: Remove the bacon from the air fryer and crumble into small pieces. Drain any excess bacon grease from the air fryer basket and wipe it clean.
- Scramble the eggs: Whisk together eggs and milk. In a greased skillet over low heat, gently scramble the eggs until they’re just set but still moist. Season with salt. Avoid overcooking as they will continue cooking in the air fryer.
- Mix fillings: Remove scrambled eggs from heat. Stir in crumbled bacon, shredded cheddar cheese, and diced green chiles until evenly combined.
- Prepare biscuit dough: Open the biscuit dough package and separate each biscuit. Peel each biscuit in half to create 16 pieces.
- Fill the dough: Spoon an even amount of the egg mixture onto the center of each dough piece.
- Form bites: Fold the edges of each dough piece around the filling and roll into a tight ball, ensuring the edges are sealed to prevent leakage during cooking.
- Make the glaze: Combine melted butter and maple syrup in a small bowl and stir to blend.
- Arrange in air fryer: Place the filled biscuit balls in an even layer in the air fryer basket with space between each for air circulation. Work in batches if necessary.
- Brush with glaze: Brush each biscuit bite with the maple butter glaze evenly over the tops.
- Air fry the bites: Cook at 350°F (177°C) for 5-6 minutes, or until the dough is golden brown and fully cooked through.
- Serve hot: Remove the breakfast bites from the air fryer and serve immediately for the best flavor and texture.
Notes
- Don’t overcook the eggs in the skillet as they will continue cooking inside the dough while air frying.
- Work in batches if your air fryer basket is small to ensure even cooking.
- Make sure to seal the dough well to avoid any filling leakage during cooking.
- Use refrigerated biscuit dough for the flaky layers and easy shaping.
- You can substitute the cheddar with your favorite cheese like pepper jack or mozzarella for variety.
