Cookie Dough

  • ¾ cup butter
  • ¾ cup sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2½ cups all-purpose flour

Glaze and Decoration

  • ½ cup confectioners’ sugar
  • 3 tablespoons water (divided)
  • Red food coloring
  • ¼ cup coconut flakes
  • Black edible marker (or black food coloring)

Instructions

  1. Cream Butter and Sugar: In a large bowl, cream together the butter and sugar until the mixture is soft and well incorporated, creating a smooth base for your cookie dough.
  2. Add Eggs and Vanilla: Beat in the eggs and vanilla extract thoroughly to combine all the wet ingredients evenly.
  3. Incorporate Flour: Gradually add the all-purpose flour, mixing gently with a spoon until a cohesive dough forms. Wrap the dough tightly in plastic wrap and refrigerate it for at least 2 hours to firm up.
  4. Roll Out Dough: Once chilled, divide the dough into two halves. Roll each half out on a lightly floured surface to about ¼ inch thickness, ensuring the dough doesn’t stick by dusting with extra flour if needed.
  5. Cut Cookie Shapes: Use a cookie cutter with an inner shape cut-out, or alternatively, use a larger cutter for the snowman base and a smaller cutter to create the cut-out in the middle. Prepare 10 large circles with a small cut-out and 10 large circles without a cut-out.
  6. Assemble Snowmen: Attach the small circles without cut-outs on top of the larger circles with cut-outs to form a snowman shape, slightly moisten the dough edges with water to help them stick together.
  7. Preheat Oven and Bake: Preheat your oven to 180ºC (350ºF). Place cookies on a baking sheet and bake for 8-10 minutes until lightly golden and cooked through. Let cool completely before decorating.
  8. Prepare Glazes: Divide the confectioners’ sugar into two portions. Mix one portion with water until smooth and runny for the white glaze. Mix the other portion with red food coloring and a bit of water to desired consistency for the red glaze.
  9. Glaze and Decorate Cookies: Dip each snowman cookie into the white glaze and immediately sprinkle the tops with coconut flakes. Using the red glaze, add a red belly on the bottom circle of the snowman shape by covering the exposed middle circle.
  10. Add Facial Details: Using a toothpick or similar tool, poke three holes on the upper circle of the snowman to mark eyes and nose. Use a black edible marker or black food coloring for the eyes, and apply small dots of red icing for the nose. Let the cookies dry and set completely before serving.

Notes

  • Make sure the dough is well chilled before rolling to prevent sticking and tearing.
  • If you don’t have a cookie cutter with a center hole, use two different sized round cutters to create the snowman shape.
  • The black edible marker can be substituted with black food coloring applied carefully with a fine brush.
