    Description

This rich and moist Chocolate Guinness Cake is a decadent dessert combining the deep flavors of Guinness stout and cocoa. Topped with a creamy, smooth cream cheese frosting resembling a frothy pint of Guinness, this cake is perfect for celebrations or any occasion that calls for an indulgent treat.

    Ingredients

    Scale

    Cake

    • Butter, for the pan
    • 1 cup Guinness stout
    • 10 tablespoons (1 stick plus 2 tablespoons) unsalted butter
    • 3/4 cup unsweetened cocoa powder
    • 2 cups superfine sugar
    • 3/4 cup sour cream
    • 2 large eggs
    • 1 tablespoon vanilla extract
    • 2 cups all-purpose flour
    • 2 1/2 teaspoons baking soda

    Frosting

    • 1 1/4 cups confectioners’ sugar
    • 8 ounces cream cheese, at room temperature
    • 1/2 cup heavy cream

    Instructions

    1. Prepare the cake batter: Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan with butter and line the bottom with parchment paper to prevent sticking. In a large saucepan over medium-low heat, combine 1 cup of Guinness stout and 10 tablespoons of unsalted butter. Heat until the butter has completely melted, then remove the pan from the heat. Whisk in 3/4 cup of unsweetened cocoa powder and 2 cups of superfine sugar until the mixture is smooth and well blended.
    2. Mix wet ingredients: In a separate small bowl, whisk together 3/4 cup sour cream, 2 large eggs, and 1 tablespoon vanilla extract until smoothly combined. Add this mixture to the Guinness mixture in the saucepan and whisk thoroughly.
    3. Add dry ingredients and bake: Stir in 2 cups of all-purpose flour and 2 1/2 teaspoons baking soda into the wet mixture, whisking until the batter is smooth and no lumps remain. Pour the batter evenly into the prepared springform pan. Bake in the preheated oven for 45 minutes to 1 hour, or until the cake has risen, is firm to the touch, and a toothpick inserted into the center comes out clean. Remove the cake from the oven and place the pan on a wire rack to cool completely.
    4. Prepare the frosting: While the cake is cooling, sift or pulse 1 1/4 cups confectioners’ sugar in a food processor or break up lumps by hand. Add 8 ounces of room temperature cream cheese and blend until the mixture is smooth and creamy. Gradually add 1/2 cup heavy cream and continue mixing until the frosting is smooth and spreadable.
    5. Assemble and finish: Once the cake has fully cooled, remove it carefully from the springform pan and place it on a serving platter or cake stand. Spread the cream cheese frosting evenly over the top of the cake only, mimicking the frothy head of a pint of Guinness. Serve and enjoy this luscious chocolate stout cake.

    Notes

    • Ensure the cake is completely cool before frosting to prevent melting the cream cheese topping.
    • Using a springform pan makes removal easier and helps maintain the cake’s shape.
    • Superfine sugar blends better in the batter for a smoother texture.
    • The Guinness adds moisture and a subtle malty flavor that complements the chocolate perfectly.
    • For an extra touch, decorate frosting with cocoa powder or chocolate shavings to resemble Guinness foam bubbles.
